REDBREAST 22 ans 2000 First Fill Sherry Cask New Vibrations 58,3%, Single Pot Still Whiskey, Irlande / Cork County ORIGINE Commercialisé de 1912 à 1985 par la maison de négoce Gilbey, le plus célèbre des single pot still irlandais a été relancé en 1991 par le groupe Irish Distillers, créé en 1966 et propriété de la société Pernod Ricard depuis 1988. Très épurée, la palette aromatique et gustative de cette magnifique version est traversée par des séquences fruitées, chocolatées, minérales ou encore herbacées, rayonnantes de maturité. NOTES DE DÉGUSTATION Nez : Fin, concentré. Au premier nez, des agrumes (orange, mandarine), du toffee, de la toile Émeri et des parfums de lavande témoignent de la complexité de la palette aromatique. À l’aération, celle-ci revêt des tonalités exotiques (mangue, kaki) et capiteuses (térébenthine) d’une pureté d’expression remarquable. Bouche : puissante. Chocolatée, l’attaque en bouche est impressionnante de présence. Délicieusement tannique, le milieu de bouche révèle de nombreux fruits secs (figue, datte, châtaigne). Des saveurs de cake aux fruits confits procurent beaucoup de gourmandise à la fin de bouche. Finale : Longue, étoffée. Dotée d’un grain très fin, l’entame de la finale dévoile des notes de banane plantain et de raisins botrytisés d’une rare éloquence. D’une grande noblesse d’expression, l’arrière-bouche évolue entre le tabac à pipe, le pain d’épices et le miel de tilleul. Le Single Pot Still est un style de whiskey typiquement irlandais. Il s’agit de la triple distillation en pot still (alambic à repasse) d’un mélange d’orge maltée et d’orge non maltée. Le résultat est un whiskey très doux et onctueux, crémeux, riche et fruité.
