Il a donc décidé de tenter sa chance dans le monde du vin. C'était en 1972 et aujourd'hui, près d'un demi-siècle plus tard, Paul Boutinot est l'un des plus grands distributeurs de vin au monde. Ce qui a commencé dans le restaurant de ses parents à Manchester (où Paul s'est rendu compte qu'ils ne servaient pas de bons vins) s'est terminé par d'incessants voyages en France, dans sa propre camionnette, pour se procurer de bonnes bouteilles à des prix raisonnables. L'idée est un succès et très rapidement d'autres restaurateurs lui demandent de l'aide et des conseils. Aujourd'hui, Boutinot est une entreprise qui représente plus de 150 producteurs du monde entier, mais pas seulement : elle élabore également ses propres vins, comme le The Big Top Chardonnay. « Nous avons nos propres vignobles. Nous pensons que c'est important. Cela signifie que nous pratiquons ce que nous prêchons ’», disent-ils sur leur site web. L'un des lieux choisis par Boutinot pour élaborer ces vins est la région californienne de Lodi. Cette région, située dans la vallée centrale de l'État, est l'une des zones où sont produits des vins de grande qualité, présentant des conditions uniques pour la croissance des vignobles. Cela est principalement dû à sa situation (très proche de la baie de San Francisco et entre la chaîne de montagnes de la Sierra Nevada et le delta du fleuve Sacramento) où l'on peut distinguer une grande variété de sols : des sols riches en minéraux (déposés par les rivières Mokelumne et Cosumnes), argileux et sableux. Le climat est chaud et sec en été et frais et humide en hiver, influencé par les vents frais du Pacifique. La confluence de tous ces facteurs explique le grand nombre de microclimats qui se distinguent dans la région et qui ont été officiellement déterminés sous sept petites appellations : Alta Mesa, Borden Ranch, Clements Hills, Cosumnes River, Jahant, Mokelumne River et Sloughhouse. Le The Big Top Chardonnay est un mélange de tous ces produits. Boutinot travaille dans cette zone depuis 10 ans, recherchant et essayant les différentes vieilles vignes qui composent cette région. Le projet est mené par Samantha Bailey, ambassadrice de la maison et Master Blender, qui fonde le secret de ce projet sur l'égrappage et le pressage du chardonnay. Le The Big Top Chardonnay est ensuite vinifié dans des cuves en acier inoxydable, sans passer par du chêne.

Ce qui a commencé dans le restaurant de ses parents à Manchester (où Paul s'est rendu compte qu'ils ne servaient pas de bons vins) s'est terminé par d'incessants voyages en France, dans sa propre camionnette, pour se procurer de bonnes bouteilles à des prix raisonnables. L'idée est un succès et très rapidement d'autres restaurateurs lui demandent de l'aide et des conseils. Aujourd'hui, Boutinot est une entreprise qui représente plus de 150 producteurs du monde entier, mais pas seulement : elle élabore également ses propres vins, comme le The Big Top Chardonnay. « Nous avons nos propres vignobles. Nous pensons que c'est important. Cela signifie que nous pratiquons ce que nous prêchons ’», disent-ils sur leur site web. L'un des lieux choisis par Boutinot pour élaborer ces vins est la région californienne de Lodi. Cette région, située dans la vallée centrale de l'État, est l'une des zones où sont produits des vins de grande qualité, présentant des conditions uniques pour la croissance des vignobles. Cela est principalement dû à sa situation (très proche de la baie de San Francisco et entre la chaîne de montagnes de la Sierra Nevada et le delta du fleuve Sacramento) où l'on peut distinguer une grande variété de sols : des sols riches en minéraux (déposés par les rivières Mokelumne et Cosumnes), argileux et sableux. Le climat est chaud et sec en été et frais et humide en hiver, influencé par les vents frais du Pacifique. La confluence de tous ces facteurs explique le grand nombre de microclimats qui se distinguent dans la région et qui ont été officiellement déterminés sous sept petites appellations : Alta Mesa, Borden Ranch, Clements Hills, Cosumnes River, Jahant, Mokelumne River et Sloughhouse. Le The Big Top Chardonnay est un mélange de tous ces produits. Boutinot travaille dans cette zone depuis 10 ans, recherchant et essayant les différentes vieilles vignes qui composent cette région. Le projet est mené par Samantha Bailey, ambassadrice de la maison et Master Blender, qui fonde le secret de ce projet sur l'égrappage et le pressage du chardonnay. Le The Big Top Chardonnay est ensuite vinifié dans des cuves en acier inoxydable, sans passer par du chêne.
