The Terredora di Paolo estate is located on the hills of Irpinia in Italy’s Campania region, a mountainous region that boasts an ideal Mediterranean climate. Between the Sabato and Calore rivers, the 180 hectares of vineyards rest on volcanic soils rich in limestone and clay that enjoy south-facing exposure and breezy afternoons. The soils and climate give the wines of Terredora great quality. Since its establishment in 1978, Terredora di Paolo has focused on reviving the ancient grape varieties of Campania including Aglianico, Fiano, Greco and Falanghina. These grapes have been important to championing Campanian’s wine renaissance. Terredora di Paolo wines follow the philosophy of “a precious fruit of nature worked by skillful hands”. Terredora is considered one of the most prestigious producers in Southern Italy. Native to Southern Italy and widely planted throughout Campania, Fiano is a waxy-skinned white variety known for producing a richer, white wine. The Terredora Fiano delivers a full bouquet of acacia berry, apricot, white peach and honeysuckle with a touch of flint and nuttiness. The palate is saline and mineral-driven with baked apple and creamy lemon. Having spent time on the lees, this wine has a round, oily texture perfect for pairing with a variety of dishes including vegetarian fare, fish and shellfish, soft cheeses, and a variety of glazed meats.
